Ingredients:

6 cups (1 bag) baby spinach
⅓ cup shredded carrots
⅓ cup red bell pepper, sliced thin
¼ cup pumpkin seeds
¼ cup dried cranberries
½ avocado, sliced
1 cup cooked quinoa
½ cup garbanzo beans
6 tablespoons lemon & olive oil dressing

Lemon & Olive Oil Dressing:
½ cup organic extra virgin olive oil
½ cup fresh lemon juice
3 cloves garlic, finely chopped
½ teaspoon sea salt
½ teaspoon pepper

Mix all ingredients in a tightly closed container and shake vigorously before pouring over salad.
