My New Year’s cleansers are one week in and are enjoying the simplicity of the quick and delicious recipes that are included in this whole-foods-based cleanse. I thought I’d give the rest of you a sneak peek, so you could see some of the awesome food my cleansers are whipping up on this program to jumpstart their health for 2013!
Fish in a bag
2 fillets cod or other firm white fish
1 – 8 ounce jar marinated artichoke hearts
1 cup of cherry tomatoes, cut in half
½ medium onion, sliced into thin strips
1 lemon, quartered
½ tablespoon of olive oil
¼ teaspoon of sea salt and pepper
¼ teaspoon of garlic powder
Preheat oven to 400 degrees. Get 2 large pieces of foil and place each fillet in the center. Top fish equally with artichokes, tomatoes, and onion. Drizzle with olive oil and juice from ½ lemon. Top with seasoning and fold the foil to create a sealed pouch. Place the pouches on a baking sheet and cook for 12-15 minutes, depending on the thickness of the fish. Serve with remaining lemon wedges.
When I made this for my husband and myself over the weekend, I didn’t have any cherry tomatoes so I simply replaced them with strips of red bell pepper. If you’re missing any of the ingredients, get creative and use other veggies that you have in the fridge. The one ingredient that makes this dish so tasty is the marinated artichoke hearts, so be sure you have some of those on hand.
