Earlier this month I had the pleasure of providing a healthy food demo for 200 Armani Exchange employees. It was so exciting to be in the space where all the creative magic happens! As I set up to feed the masses, very well-dressed employees scampered by with storyboards for their next projects. I was hoping that someone might toss me a sample or two from a past season, but no such luck. 😉 I did however meet lots of wonderful people who LOVED my “get glowing” salad, with some coming back for seconds and thirds. So, for those of you who are suffering from salad boredom, I thought I’d share my summer version of this salad that combines loads of different texture and flavors! Not only is this a delicious summer meal, but it’s filled with antioxidants and healthy fats, boosting your immune system and giving you glowing skin.

Get glowing summer salad

6 cups (1 bag) baby spinach
½ cup shredded carrots
½ cup red bell pepper, sliced thin
¼ cup pumpkin seeds
¼ cup dried cranberries
½ avocado, sliced
6 tablespoons lemon & olive oil dressing

Lemon & Olive Oil Dressing:

½ cup extra virgin olive oil
½ cup fresh lemon juice
½ teaspoon sea salt
½ teaspoon pepper
Wisk together all ingredients before pouring over salad. Serve Immediately.

*I must give a shout-out to my husband who helped me transport all my supplies via the subway to the Armani offices. Getting home was another story, but it was a good workout if nothing else! 😉
